Banana Bread w/Coconut

banana bread.jpgMore baking this month!  This time driven by some over-ripe bananas that I had no intention of throwing out. I decided to venture into one of my other cookbooks to try a recipe from Mark Bittman. He had a new twist, coconut, which I thought sounded delicious.  And it was; talk about amazing! With some chocolate chips tossed in as well, this bread is to die for.   

 

Pre-heat the oven to 350 degrees and grease a large loaf pan. 

 

Mix together in a large bowl:

1 ½ cups all purpose flour

½ cup whole wheat flour

1 teaspoon salt

1 ½ teaspoon baking powder

¾ cup sugar

 

In a separate bowl:

Cream 1 stick butter

Beat in 2 eggs

3 very ripe mashed bananas.   

 

Add this to the dry ingredients and then gently stir in:

1 teaspoon vanilla

½ cup shredded coconut

½ cup chocolate chips (the chocolate may or may not be optional depending on your household).  

 

Pour batter into the loaf pan and bake 45-60 minutes until browned and a toothpick inserted into the center comes out clean. Because of the bananas this bread stays moister than most so don’t overcook.   

 

Cool, remove from pan, slice and serve!

Tonight I went into Safeway in San Jose to pick up some diary products. I went by the fruits & vegi section and saw some grapes which looked pretty good. They were in bags. The sign on top read "2 for $3". I grabed two bags. At the checkout counter I noted the total was a bit high, so I asked the checker "did the machine take my phone number?". She said "Yes". When I got home, I put my glasses on and read the receipt. The graps were $3.99/lb. and the two bags costed me over $10.

Folks, don't do what I did. Keep your eyes WIDE OPEN when you shop in Safeway. They will cheat you if you allow them!!

Is anybody in the corporation watching what is happening at the safeway store on Woodstock, in Portland Oregon. for some reason, employees that have worked at this location for years are transferring or just plain leaving the corporation. From the outside looking in looks like there may be a bad manager, or are you another conglomerate that promotes bad management, can someone find out what is going on at this once glorious location.
