We had an event at the office where our fabulous chef showed us how to prepare some amazing food. My favorite recipe was the Brown Sugar Bacon Parfait. Everything is better with bacon, but I had not thought about putting it on ice cream! I served this at the BBQ we hosted the following weekend and no surprise it was a HUGE hit!
Here’s the recipe (serves 4). Give it a try and let me know what you think.
Preheat oven to 450 degrees. Lay 12 strips of Open Nature Applewood Bacon onto crinkled aluminum foil sheet on a baking pan and sprinkle 6 tablespoons of brown sugar and some black pepper on top. Bake for 8-12 minutes until crispy. Let cool, then cut or break into crumbles or ~2inch strips depending on your preference. Scoop Open Nature Vanilla ice cream into a dish, drizzle with Open Nature Crunchy Peanut Butter, sprinkle with Open Nature Honey Nut Granola, the bacon, and garnish with a sprig of fresh mint. Delicious!
