I had a business trip to Denver last week and discovered a new dish – Green Chili. Have you had this? All I can say is wow, I am hooked, and I am now on a quest for the recipe. From what I could tell this soup-like chili is made from roasted green chiles, pork (sometimes), and some spices – it’s fiery, a little sweet and exceptionally fresh. I’m not a fan of really spicy food but for some reason the heat level in this dish, while hot, was not so overpowering that I couldn’t taste what I was eating. It’s served with flour tortillas which helped cut the heat a little, although it still took a good hour after I was finished for my lips to stop burning.
