The girls would be happy to eat pizza and quesadillas every evening but Max and I, we like a little more variety. That said, by the end of the work week I’m down to bits and pieces that I usually cobble together into a meal. Some nights if the leftovers stay in their original form I call this “LBOE night” (pronounced elbow) – “little bit of everything”. Often times though they get transformed into something else. So the other night I was piecing together our dinner from the bits of leftovers we had on hand and decided to add a twist to our standard quesadilla (our default as we always seem to have tortillas and cheese on hand). I had some sliced turkey leftover from making sandwiches for our lunches and a jar of sun dried tomatoes in the fridge so I added those into the cheese – it was really good! What do you put in your quesadillas?
