We’re camping on a lake in northern Oregon with two other families this weekend. Between us, we’ll have six hungry boys, not to mention parents! We’ve got lots of fun activities planned – a hike, fishing, swimming, and of course, hanging around the campfire at night. On my evening to cook for the gang, I’m making Camping Stew–a tried and true favorite in our family.
Camping Stew
Makes 4 servings
In a frying pan over a grill or camp stove, cook one chopped onion and one package of pre-cooked, sliced chicken sausages until sausages are browned. Add a sprig of fresh rosemary, one can of diced tomatoes and two cans of rinsed and drained cannellini beans. When mixture is piping hot, top with grated Parmesan cheese. Serve with a bagged green salad with light dressing.
