Easy Camping Meals

27i3E234B537290AC32We’re camping on a lake in northern Oregon with two other families this weekend. Between us, we’ll have six hungry boys, not to mention parents! We’ve got lots of fun activities planned – a hike, fishing, swimming, and of course, hanging around the campfire at night. On my evening to cook for the gang, I’m making Camping Stew–a tried and true favorite in our family. 

 

Camping Stew

Makes 4 servings

In a frying pan over a grill or camp stove, cook one chopped onion and one package of pre-cooked, sliced chicken sausages until sausages are browned. Add a sprig of fresh rosemary, one can of diced tomatoes and two cans of rinsed and drained cannellini beans. When mixture is piping hot, top with grated Parmesan cheese. Serve with a bagged green salad with light dressing.

I wish I would've read this post earlier... I just came back from camping on Russian River with my friends for the first time in my life. This would have been a great meal for all of us!

We had to dine on ham sandwiches and smores, but I know next time I'll definitely have to try this one out; Thanks for the recipe Kerry!

Yum!  This sounds so great!  We were camping this summer and I would have loved to have made this!  I like how it's so simple and healthy!  We had plain chicken sausages and I got really tired of them.  We will have to do this recipe next summer.
