I’m
hosting an Easter egg dyeing party for the neighborhood next weekend, so my
mind is on eggs–particularly the seven dozen that I’ve got to hardboil. But
there’s another reason I’m thinking about eggs:
in case you haven’t heard the “egg-citing” news, eggs are lower in
cholesterol than a decade ago.
A large egg now has 185 mg of cholesterol (down from 215 mg), according to USDA, which conducted the nutrition re-analysis. This drop is apparently due to the way the chickens are bred and changes in the hens’ feed. That’s great news for egg lovers. And the news doesn’t end there! Coinciding with this cholesterol news is advice from the 2010 Dietary Guidelines for Americans that healthy people can eat an egg a day without worrying about increasing risk of heart disease or raising blood cholesterol levels. It’s still important to limit the total amount of cholesterol you eat to no more than 300 mg each day, so choose low fat dairy foods and trim meats of excess fat to stay within limits. But enjoy a daily veggie filled omelet, scrambled egg or my soon-to-be specialty–hardboiled egg–for breakfast, lunch or dinner, without worry!
