Grilled Salmon

We’ve been grilling a lot of chicken, burgers, sausages, and hot dogs lately so for last weekend’s BBQ with friends we decided to try something different - salmon. As luck would have it salmon was on sale and there was an online coupon for even more savings - $3 off Fresh Salmon Fillets, 2lbs or more! It was simple to prepare – we cut the salmon into individual servings, brushed each side with olive oil and then rubbed with a mixture of brown sugar and cayenne pepper (I used 3-4TBSP of brown sugar & 1 tsp of cayenne, add more or less cayenne depending on the level of kick that you like). Once it was grilled I used a trick that I picked up from one of my friends – we served it on top of mixed greens dressed with a little balsamic vinegar (arugula would have been ideal but I already had the greens at home). We served the salmon with sides of grilled asparagus (also on sale) and tomato salad - delicious! Now I’m on a mission to grill more fish – I’d love to know what types of fish you grill and your favorite seasonings.

Kate,

Wish I'd known this a few days ago (the online coupon) while I was camping.  We spend a lot of time camping in the mountains and Salmon is a favorite grilling food for me.

I wanted to pass a tip to you and your readers.  My father-in-law makes a wonderful Grilled Salmon, towards the end of the grilling, he dribbles honey on the top and grills a few more minutes.   Divine!

My friends in Loveland, Colorado invited us over this past summer for a cook out and they added the Salmon to the top of the salads like your picture but she also threw in the salad mix a cranberry/granola mix which was fabulous!  Peggy says she just buys the bags of granola mix and adds them to her salads.  The dressing was an olive oil combination.  I can't wait to make it for my father-in-law!

Glad to have found this part of the Safeway site.  My first time on the site!

That's such a great tip Kathy!  Next time I make my Salmon, I'll keep this in mind! Never had it grilled with honey, but it sounds tasty.  Hope You have a great Labor Day weekend!  Thanks for dropping by! :smileyhappy:

Salmon has such a subtle taste, I hate to mask it with strong coatings.  I just squirt some lemon on it, wrap it in aluminum foil, and bake or grill.  Oven:  325 for 15 min., grill, much shorter - maybe 8.  Try it and savor that fresh taste - my favorite all my life!

loved the suggestion for the salmon recipe with the cayenne pepper and brown sugar rub...i don't have a grill but i'm goin' to try it in a fry pan on the stove. i usually use hoisan sauce on mine but recently tried zesty honey mustard rubbed on it after having eaten salmon seared with honey mustard it at chile's restaurant. it was really delicious and much cheaper!! try it...you'll love it!! i eat salmon about five times a week so i need different options!
