Light & Lively Spinach Dip

We’re halfway through the summer and we’re trying to keep up with all of our friends and family! One of my favorite things to take to a party is Spinach Dip – without the fat!  It’s quick, easy and your guests will be pleasantly surprised! First things first, pick up your Sourdough Bread Bowl and Sourdough Baguettes or French Baguette from Safeway Bakery fresh on that day! Next, follow the recipe below and you have a fabulous dip to take to your party!

 

Light & Lively Spinach Dip

 

  • 1 cup Safeway Light Mayonnaise
  • 1 cup Lucerne Light Sour Cream
  • 10oz frozen chopped spinach (thawed and water drained)
  • 1 4oz can water chestnuts (finely chopped)
  • 1 bunch green onions (finely chopped)
  • 1tsp. garlic salt
  • Kosher or sea salt
  • Black pepper
  1. Finely chop green onions and stems (scallions) into small pieces. Next, chop ½ can of water chestnuts into small pieces.
  2. In a bowl, mix mayo, sour cream, and chopped frozen spinach (drained & thawed) together.
  3. Add chopped green onion, water chestnuts, garlic salt.
  4. Add salt and pepper depending on your taste!
  5. Last, cut off the top of the bread bowl and hollow out. Add the fresh prepared spinach dip. Garnish with salt, pepper and left over green onion on top! Slice the baguette thin, arrange on a platter and you are ready enjoy.

Additional serving suggestions – add sliced cucumber, celery and baby carrots for an even healthier option!
