Sweet Potato Pancakes

I love Garnet yams and tragically often forget about this “tuber” until the Fall.  And I could use some help here – is it really a yam or a sweet potato? Regardless, last week while I was looking around the produce area for something new to grill, they caught my attention so I decided to mash some as a side dish for dinner.  I kept it simple, wrapped 4 yams in foil and grilled until soft.  Once they cooled enough to be handled, I removed the skins, added a little butter, salt and cinnamon and the result was a sweet and nutritious side dish.  There was some left over so the next night, while I was mixing the pancake batter for dinner, I added the leftover mashed yams and a pinch more baking powder (I was worried the pancakes wouldn’t raise).  The girls loved the sweet taste and fun orange color.  I loved adding a nutritious twist to a great tasting, economical, and easy, weeknight dinner!  What are some of your easy weeknight meals?

did you know that whena blood sugar is up  is a real good night for sourkrout as it will lower the blood sugar and hey its different
