Backyard Camping

After our mountain hike on Fathers Day, Max and I got the itch to go camping.  We used to camp a few times a year before the kids were born (’m referring to this stage in my life a lot these days and now refer to it as “BK”, “before kids” ).   Anyway, now that the twins are out of diapers and no longer put things they shouldn’t in their mouths, we’re ready to venture out again.  Since “we” didn’t quite get our act together to reserve a campsite for the 4th of July weekend we’ve decided to have our inaugural trip in our backyard.  No fireside s’mores (although maybe on the grill… ) but eating and sleeping outside  - I think the girls will get a kick out of this.   I’m putting a note on the fridge now to remind Max to turn the sprinklers off….What plans do you have for the 4th of July?

Soccer Practice

We’ve started playing soccer on our front lawn in preparation for the recreational soccer program the girls will be in this summer.  The instruction is geared towards having fun while teaching the kids the fundamentals of the game and it’s held at the park that’s walking distance from our house (perfect!).  Gabby has a friend that will be taking the class with her,  Maddy and Mae will be in the “pre-school class” together.   The girls prefer, for some unknown reason, to play our “soccer game” on our front lawn which must be pretty entertaining for the neighbors.  We put some make shift markers in the grass as the “goals” (the “field” is maybe 20 feet long and 8 feet wide) and we each take turns dribbling the ball with “small kicks” around the lawn).  The girls love kicking goals and stealing the ball.  We still have some work to do on the “no hands except for the goalie rule” but I’m sure that will come with time.  What activities do you have planned with your kids this summer?

 

Sweet Potato Pancakes

I love Garnet yams and tragically often forget about this “tuber” until the Fall.  And I could use some help here – is it really a yam or a sweet potato? Regardless, last week while I was looking around the produce area for something new to grill, they caught my attention so I decided to mash some as a side dish for dinner.  I kept it simple, wrapped 4 yams in foil and grilled until soft.  Once they cooled enough to be handled, I removed the skins, added a little butter, salt and cinnamon and the result was a sweet and nutritious side dish.  There was some left over so the next night, while I was mixing the pancake batter for dinner, I added the leftover mashed yams and a pinch more baking powder (I was worried the pancakes wouldn’t raise).  The girls loved the sweet taste and fun orange color.  I loved adding a nutritious twist to a great tasting, economical, and easy, weeknight dinner!  What are some of your easy weeknight meals?

 

 

Now Safeway has four ways to get coupons on the website.  The first two I’ve mentioned before – printing coupons from the Safeway site and P&G eSaver, a digital coupon site where you add the coupon right to your Club Card.  Two new digital coupon options are also available which means even more coupons!  Shortcuts.com and Cellfire.com also enable you to add coupons directly to your Club Card – so nothing to carry with you to the store.  When you buy the product the coupon is automatically applied at the check stand.  And, any coupons from the digital coupon services (P&G eSaver, Cellfire, Shortcuts) can be applied to your online shopping order too.  One thing to note, you need your actual Club Card # (not your phone #) to register on each of these sites.  If you don’t have it you can call (1-877-723-3929) or email (http://www.safeway.com/IFL/Grocery/Comments#iframetop) Safeway customer service and they will find it for you within the week.  Check it out!

White Peaches & Blueberries!

I can’t decide whether I’m more addicted to blueberries or white peaches this summer. And the girls, they go through a pound of blueberries in about 10 minutes and can’t get enough of the peaches. Given my love for both of these fruits I have visions of baking all sorts of delicious treats, but then I think why? They are so sweet and juicy on their own; it seems a crime to add anything that could compromise what nature delivered in such pure form! And then I remembered one of our grilling recipes from a year or so ago – grilled peaches topped with ice cream –so simple and tastes like the center of a crisp or cobbler! We skipped the sauce, and instead just sprinkled the peaches with a little cinnamon – yum! What are some of your favorite summer fruits?

Father’s Day!

I asked Max what he wanted to do for Father’s Day and he said “the hike we never did on Mother’s Day”.   Great!  It’s a little bit of a drive but totally worth it.   There’s a rustic inn at the top of one of our local mountains that hosts a pancake breakfast once a month during the spring/summer months – and the views are amazing.  This time though,  I wanted a little insurance against the Sunday morning inertia that hit us last time so I called up another family and made official plans.  The girls have also been busy making crafts for him at school – there’s a “Dad you Rock” paper weight (which uses rocks), a portrait, and one other yet to be unveiled surprise at the Fathers Day Breakfast that Maddy’s room is hosting the Friday before.   Really cute to see them get excited about their projects.  What will you be doing to celebrate Father’s Day?

 

 

 

Yes you Can Freeze Cheese!

One of my coworkers mentioned this a month or so ago so I thought I would give it a try.  We go through a lot of cheese sticks and shredded Mexican cheese each week between lunches, snacks, quesadillas, and grilled cheese sandwiches.  Every so often there are some great sales on these items and I typically haven’t loaded up since I only have so much room in my fridge.   Well, I decided to try freezing the shredded cheese to see if it would work – and it did!  I literally just threw the bag into the freezer and after a month or so I took it out – there was no difference in taste or texture.  I imagine the same would hold true for the cheese sticks as they are individually wrapped and semi-soft (I would keep in their original large package).  Next time there’s a sale I’m going to stock up!    What are some of the items you freeze to take advantage of great sales?

 

Live Healthy Safeway

We started an opt-in contest at work – teams of 10 compete to lose weight and/or increase activity as part of a drive to be healthier.   Four hundred and seventeen teams were created across the company, and each week we individually log our weight and activity minutes on the website to track our progress.   There are incentives along the way and “grand prizes” for those who win each category at the end of the first 100 days.   It’s a perfect time to do it too since the weather is better and everyone can be outside.  I have to admit, it’s been fun to see various teams walking at lunch, or heading back from the gym in the morning.    This is a small scale “pilot” to see if providing incentives has an impact on overall health – the ultimate goal being healthier and more productive employees and reduced health care costs.   A pretty interesting experiment, one I don’t mind being a lab rat on!

When I went to pick up Gabby at school the other day she had an “ouch” report, which is a quick form the teachers fill out when she has a minor scrape/bruise at school.   With three young girls we’ve become accustomed (and a little numb) to these as they happen pretty frequently and they love showing off their “band-aids”.  This last “ouch report” caught my attention as it was a little different – Gabby had gotten her knee stuck in the bars on one of the play structures and they had used cooking spray as lubricant to help her get it out.  It sounded like it was somewhat of an event as the other kids cheered for her when she became unstuck.   Kudos to those teachers for thinking quickly!  Now, I keep a basic first aid kit in both cars (as well as a basic earthquake kit) as I like to be prepared. And while it’s impossible to anticipate all potential situations, getting stuck in a play structure isn’t that out of the ordinary so I’ve just added a small can of cooking spray to our car kits.   What kind of kits do you keep on hand for “emergencies”?

Grilling Season is Here!

We grill all year long but when Summer hits we grill even more often. Meat of course but lots of vegetables too. One of the “regulars” in our house is grilled zucchini. Slice in half, brush with a little olive oil, sprinkle with salt and pepper, grill and you have an easy side dish that can be eaten hot or cold. After they’re grilled we slice some a little thinner so we can add them to sandwiches. The rest of the zucchini gets chopped into bite size piece, mixed with fresh lemon juice, cilantro, and mint for a great tasting salad. Give it a try!

Last Day of School

Where did the school year go?  Gabby finishes up Kindergarten this week and I feel like we just got in our school groove!  I had one of those “I’m still a new mom and it surprised me” moments the other day, this time related to the last day of school.  I know my memory is a little fuzzy but I don’t remember festivities on the last day of school – yes we were all thrilled and excited but with few exceptions classes were still the same on the last day as they were earlier in the school year.   That appears to have changed somewhere in the last couple decades (I guess I shouldn’t be surprised) and now there’s some “class/administrative” activity but also a big celebration.  I heard from one co-worker that their school has a “Stepping Up” ceremony on that day to acknowledge that the kids are moving on to the next grade.  Gabby’s school hosts something they call “Field Days” which is a campus wide fair with games and activities that all the kids participate in.   I’m trying to think of something to do that we can make into a tradition to commemorate the day – I would love your ideas!

Double Duty Recycling

A couple of industrious and thoughtful coworkers of mine added a twist to their recycling efforts that I thought I would share.   They live in areas which do not have curbside recycling programs so they went online to see what local resources might be available.   They collected their bottles and cans, brought them to the nearby recycling center, and then donated the proceeds to charity (in this instance it was Safeway’s Easter Seals drive).  I thought that was a very cool way to get some extra mileage out of one simple “act of greenness”.   The centers require that you sort the materials and remove the plastic caps from the bottles (check your center’s policy as they may vary by location) but you don’t have to wash or crush them.  I’d love to hear about “double duty acts of greenness” that you’ve done!

 


Safeway is running a promotion in June in honor of National Dairy month.  You can enter a sweepstakes for a trip for four to Denver, Colorado for a  “Rocky Mountain prehistoric adventure”, and, there is an instant win game where you can win a pair of tickets to the new Ice Age movie, “Ice Age: Dawn of the Dinosaurs”.   Recipe booklets will be available in store and in addition to some creative recipes there are also a few coupons included.  One of the recipes that caught my eye was a “wings” version of classic bbq chicken provided by Dean’s.  Rather than marinate the chicken in traditional bbq sauce, use a buffalo wing sauce.  After you’ve grilled the chicken top with a spread made from french onion Dip, crumbled blue cheese, and sliced celery leaves.  Serve on a bun along with sliced tomatoes, onions, and lettuce – yum! I love wings and this looks like an easy way to get the flavor without all the work (my kind of recipe!).

Produce – Cherries!

Cherries are in! I love cherries and one of my all time favorite desserts is cherry pie, a la mode of course. The last few years I’ve attempted to make the pie but haven’t gotten it quite right. The filling is either too runny or too much like jelly. And, actually, to be completely honest, I’ve attempted the filling, and use refrigerated pie crusts to save time (I think the Safeway brand is great btw). This year I think I finally found the recipe that yields the flavor and texture that I’ve been searching for, right there in my Joy of Cooking cookbook. Two key ingredients: a little almond extract to bring out the cherry flavor and tapioca as the thickening agent. Yum!
